Mini Cheesecakes + recipe

I made these for my Japanese club's potluck. Why cheesecake? Because I could! ^ . ^

I usually don't usually have a good track record with cheesecake...I don't know if it's my oven or the pans I use but it never seems to come out the way I want it to. One of the first ones I ever made actually improved with AGE like cheese! O . O

As such, I was AMAZED when these ones turned out so well! I got the recipe from Allrecipes. I changed the base to crushed oreo cookies mixed with a few tablespoons of melted butter and I also added an extra handful of sugar to the cheesecake mixture.

Although to be honest, they turned out to be more like cheesecake cookies. My food processor wasn't working and I had to break the oreos with a rolling pin so there were a few chunks that didn't get broken up enough.

This recipe is actually really easy! I would highly recommend it, especially for anyone nervous or skeptical about making cheesecake.
